I’m not lying when I say that this always comes out perfect. It actually does. For some strange reason even people, whose cakes are always fails, make this and are surprised to find that the cake is just perfect. And this is why, sometimes, I like to call it “The Always Perfect Cake”.

This is the cake my mum used to bake the most. She called it Keike which I believe is just a sound by sound recreation of the work cake. Oh! I loved it so much! It didn’t last long, I’m afraid. It was delicious on its own but, in the morning, with some spread butter on a slice and dipped in a white coffee was the highlight of my morning.
It is soft in the inside and crunchy on the outside. It is a simple delight for your senses.
Now my kids are the ones to jump in excitement when this goes in the oven. Isn’t it great to pass on these small memories on to the next generation?

Easy Pound Cake

Ingredients
- 150grs Sugar
- 250grs Plain Flour
- 3 Eggs
- 2 tsp Baking Powder
- 250grs Softened Butter
Directions
- Add melted & cooled down butter on to a bowl.
- Add sugar to the butter and cream it..
- Add the eggs one by one, mixing after each egg is added.
- Add the baking powder to the above mix.
- Slowly, start adding the flour until all the flour is used.
- Line a tin or grease it and add the mixture to it.
- Put in a preheated oven at 200 degrees for approx 20 mins (depending on your oven) Do keep an eye on it just in case.
- Let it rest for 5 mins and then remove from the tin.
- Serve and enjoy!
