Runner Beans in Sweet Paprika

What can I say about cooked runner beans? You don’t find them as a tapa or a restaurant dish, but it is the kind of food that you’ll find is part of the everyday cooking of a common household (at least in Galicia). The smell of the beans, potatoes and eggs showered with the sweet paprika sauce, makes it a memorable one.

I have to be truthful here. When I was a kid, the prospect of runner beans for lunch was not a great one for some odd reason.

Fast forward so many years into the future, and just the smell makes me remember my mum peeling off the strings of the runner beans under cold running water and then chopping them in bits to add to a pot of hot boiling water. Then asking me to peel off a few cloves of garlic… I do like this dish so much now…

My kids, unlike me at their age, get excited to know this is what there is for dinner. Their favourite bit is the egg. So I have to make sure there are always plenty of eggs. I wonder what they will remember of this dish when I become but a memory in their minds.

Runner Beans in Sweet Paprika

Ingredients

  • 600 grs Stringless Runner Beans

  • 4 Eggs Boiled and Peeled (Remove the eggs for a vegan option)

  • 3 Garlic Cloves, peeled and sliced

  • 4 Potatoes peeled and diced

  • 1 Tspn Sweet Paprika
  • About 4 tbsps frying oil
  • Salt to taste


Directions


  • Fill a pot with water and bring it to the boil.

  • Add the chopped runner beans to the water together with the potatoes (you can also add the uncooked eggs on this step or do it separately) and salt to taste.

  • When soft, drain the water and return the beans, potatoes and peeled eggs to the pot..

  • .On a small frying pan add the oil and when hot fry the garlic until brown.

  • Remove the pan from the heat, add the paprika and stir.

  • Pour this over the beans, potatoes and eggs and mix carefully as you don’t want to mash the potatoes.

  • Serve hot and enjoy!
