Hake Galician Style

Merluza a la Gallega is another typical dish from Galicia which is known all over. It is extremely simple to make and an outstanding dish.

You’ll find that most recipes that end up “Galician Style” or “A la Gallega” have the same base: sweet paprika, garlic and olive oil, which might make you think that this will not be so flavourful as it is very simple. However, this is where you’ll get it wrong and will have to try it to see by yourself how tasty it is.

Get a good fresh hake and you will be set for an even better dish.

I ate this a lot back home. I guess my mum enjoyed how easy it was to prepare and cook. I’d eat it here too but the hake I’ve encountered so far is not of very good quality so I’ve had to use monkfish instead (like in my video below) and monkfish is VERY expensive on this neck of the woods, so I cannot cook it as much as I’d love to. Sniff, sniff.

But still, if you have the hake or the funds for monkfish, do give it a try. You will be surprised at how good it is. I’ll be happy just remembering the smell of the garlic and the paprika spreading through the house.

Hake Galician Style

Ingredients

  • 4 Medium thick slices of Hake (in the bone)

  • 1 Onion, cut in chunks

  • 1 Bay Leaf

  • Salt to taste
  • 3 or 4 Potatoes, sliced medium thick

  • 1/2 Cup Olive Oil
  • 4 Cloves of Garlic, sliced
  • 1 Tbs Sweet Paprika


Directions


    1. Fill a half big pot with water and add the salt, bay leaf and the onions.
    2. Cook for about 10 minutes.
    3. Add the potatoes and cook in low medium heat until soft but not breaking (about 10 minutes).
    4. Add the hake and cook for about 5 to 10 minutes.
    5. Take off the heat and set aside.
    6. Put the oil in a pan and heat.
    7. Once hot, add the garlic and cook until golden.
    8. Add the sweet paprika and immediately take off the heat and mix.
    9. Add a ladle of the liquid where you cooked the potatoes and fish and mix.
    10. Cook in low heat for 5 minutes.
    11. Turn off the heat.
    12. Spread the potatoes and onions evenly on a serving tray. 
    13. Add the pieces of hake on top.
    14. Then pour the sauce over the fish and potatoes with a spoon/smaller ladle.
    15. Serve hot and enjoy!
